The Higonokami shape takes its name from a Japanese province on the island of Kyushu. The Sauveterre knife was designed by Henri Viallon from a model of a knife from the Aveyron region of the nineteenth century. The distinctive feature of this knife is a leaf-shaped blade reminiscent of a sage leaf and a sage leaf on the nib. The handle of this elegant knife is a combination of ebon and buffalo bone. The special feature of this model is the centred mitres, which shows a sage plant. The taut back spring is forged and decorated by hand. It ends in a guilloche sage leaf.
