We find traces of remarkably large Rasolino knives, about 25 cm in size, in ancient models with a simple spring mechanism and an ox horn handle decorated with carvings and grooves running down the material. Once the Giolitti Law was passed in 1908, prohibiting the possession of sharp knives, it is thought that a revised size model of this knife was one of the few models that were permitted.

Very similar to the Fiorentino in appearance, the main difference with this knife is that the handle does not have any metal trimmings. Compared with the Fiorentino, it has sleeker lines and a rather elegant finned profile. The handle is typically made from hot-forged ox horn and fitted with a simple spring mechanism, while the butt is sometimes crafted with small carvings. This model fully deserves its place among the Scarperia classics.

The knife is very sturdy thanks to its incredibly stylish characteristic metal frame.We craft two different versions, one with studs and one without.

The scissor-style handle is crafted from two milled sheets of metal, which come in either stainless steel or titanium. The knife is admired for its lightness but also for its robustness. The finishing on the inserts can be customised with any of the natural materials we use. The name “Saracca” probably comes from the Italian word sarago which means a white seabream, whose tapered outline resembles the shape of this knife. Its ancient origins date back at least two centuries. This knife was mainly used for work, although it is quite possible that it was used in duels or tavern brawls which were very common at the time. It is a real weapon with the incredibly sturdy frame of the handle, made from a single piece of cow horn, and an external spring mechanism which locks the blade.

The Tre Pianelle knife gets its name from its style of blade which features three facets: two slanted side panels and a central panel. This knife has a long history; in fact, the three panelled blade was found in Roman and Sicilian models from periods before the nineteenth century and in other hunting knives. They had incredibly sharp lines that were more suitable for self-defence or attack rather than just cutting. However, this bloodthirsty side to the knife’s history was left behind when it became a Scarperia knife and fortunately Tuscany was not plagued by the series of stabbings that had been very common in other regions in previous centuries. In fact, this type of knife is rare among Scarperia knives because its specific features do not provide the very best cutting ability which is usually found in our knives.As the Tre Pianelle is a clasp knife, the blade is only sharp on the inner side which folds into the handle, while the side along the spine is not sharpened. As with all our knives, the heel of the blade features our characteristic cross of St Andrew. The handle is very slender and ends with the metal ferrules that are similar to the ones on the Fiorentino knife.

Designed by the Coltelleria Saladini in 1998, the “Trend” knife features all the usual characteristics of a clasp knife. However, its modern design has been developed to ensure that everyone can have their own personal steak knife to use at home or at a restaurant.The smooth blade is very slender and sharp to provide the perfect cut of any meat. It is made from stainless steel which has been blanked and tempered to reach the perfect hardness, while the Saladini brand logo has been engraved onto the inside of the blade. Sehr markant ist die spitze Klinge des Messers. Die innere Seite der Klinge ist scharf geschliffen. Den Klingenfuß ziert auf der Rückseite ein Andreaskreuz.Die Griffschalen wurden aus feinem satiniertem Büffelhorn massiv gearbeitet. Das Material ist haptisch sehr angenehm. Das Griffende ist mit einer kleinen Neusilberplatte verziert. Das Resort des Messers ist von Hand guillochiert.
