The London knife is the knife of Brittany; it is the sailor’s knife par excellence. It undoubtedly originated in England. It is sometimes also referred to as the London knife. In the early 20th century, the so-called sheep’s foot blade was the only blade shape permitted on board ships. Thanks to the rounded blades, the risk of serious injury during brawls was reduced.
The handle scales are made from stabilised blue birchwood. Small stainless steel rivets in the shape of an anchor adorn the handle. High-performance 12C27 Sandvik steel has been used for the blade. The steel is considered to retain its edge well and is easy to resharpen.

Founded in 1810, the forge was taken over by Arbalete Gênes David in 1922. The traditional forge is now managed by Christoph Durand.
Both Thiers knives and all Laguiole knives are made by hand in the company's own workshop in Thiers.
